I’m all about quick, easy, and healthy meals.
It’s no secret I love seafood and can’t get enough.
The other day I was in the kitchen trying to make lunch and just started grabbing random things out of my fridge and pantry.
Here is what I used:
You’ll notice I use a lot of guessing. I rarely measure things.
- Quinoa- 1/2 cup
- Thawed, cooked shrimp -heaping handful
- Spinach- handful
- Lemon and lime juice (I used real fruit, but I’ve also used the juice from the store)
- Pepper to taste
- Garbanzo beans- handful (drained)
I just cooked the quinoa like normal, and then sautéed the rest of the ingredients on the stove.
The end result was fabulous! It was super quick to make, healthy, and full of great flavor.
