My first “thought out” vegan meal

I eat vegan 90% of the time without thinking about it. Now that my “Oh She Glows” cookbook has arrived I have been diving into it, writing down recipes and getting excited to start making them.

I went to the grocery store last night to get groceries for the week and was mostly successful. I was unable to find miso and tahini. Living in a small town does have its downfalls at times…

However,¬†my friend and I have decided to drive to Fairfield, Iowa once a week for groceries to get our “weird ingredients”. Although Fairfield is smaller than Ottumwa, they are a bit more cultured in the food department. So rest assure- I will be able to make everything!

Anyways, tonight I made my first recipe- the Thai peanut noodle bowl. It was amazing. One of the things I loved most about this recipe was how EASY it was.

At first I thought making the Thai peanut sauce would be difficult. Quite the opposite.

The best part (well there are many) is that I have leftovers for school tomorrow!

A quick update on marathon training:

I am fearing I have a stress fracture in my right foot. I have had some pain the last few runs and I am extremely anxious/nervous about it. I have never had one before so I am not positive that is what it is- I will have to wait to see what the doctor says.

Until then I am not going to run to play it on the safe side.

Not running makes me quite extremely¬†angry so that is why I haven’t blogged about training the past week or two. My main concern is the Des Moines Marathon which is ONE MONTH AWAY!!

The thought of not being able to run it makes me sick. Yes that may sound dramatic, but it really does.

Anyways, on a happier note, here are some random pictures from last weekend! My parents came down and we got family pictures taken and their new dog got to meet Charlie and they had the best time running around my yard and house!

He waited by the side door for his guests to arrive, like a true gentlemen. His orange bowtie was in preparation for the Bears game.


We spent most of Saturday in my backyard watching the dogs play.


Although the Bears lost to the Packers on Sunday, I still had a wonderful time watching the game with my dad and Charlie!

I have decided to start lap swimming a couple days a week to keep up my aerobic fitness so I’ll let you know how that goes. The only real swimming I have done would be considered doggy paddling. I love being in the water so I am excited to start swimming for exercise.

My cousins girlfriend is coming over tomorrow night for dinner and wine so I am going to make the Vegan Enchiladas with Cilantro Avocado Cream Sauce . My friend made them for me last year and I LOVED them.

Have a fabulous Thursday tomorrow! My weeks truly go by so fast and I can hardly believe tomorrow is Thursday. That is a true sign that I love my job (even though my little friends have given me a cold).

My Aunt Tara is coming this weekend, which of course means FUN. We are going to the local art show and then a brewery on Saturday with my cousin and his girlfriend, so if I remember I’ll take pictures.
