Eggplant Pizza

Mini eggplant pizza

I have so many eggplants in my garden I quickly needed some find some recipes to get them used up before they went bad. Truthfully, I have never been an eggplant lover, as I have never enjoyed their texture and lack of recipes.

Well thanks to Kyla planting a lot of eggplants in my garden, I now have an abundance. I decided it was time that I try to find a good recipe for them.

I found a great recipe from Julia Child called “eggplant pizzas”. The first thing that caught my attention was the short list of ingredients (half of the meal came from my garden!).

I decided to give it a try, as it certainly wouldn’t hurt anything.

Here are the ingredients I used:

-1 eggplant*

-4-6 tomatoes* (depending on size)

-handful of chives*

-1 small white onion*

-basil*

-1 tbsp. minced garlic

-Parmesan cheese

-olive oil

-seasoning

The first thing I did was slice the eggplant in 3/4 inch rounds. I then placed them on a paper towel and sprinkled salt on the eggplants to draw out moisture.

I found it fascinating how much moisture was in each round!

While the eggplant was on the paper towel with salt (about 15 minutes) I prepared the sauce.

I sliced the tomatoes in quarters and then put them in my food processor. I did the same for the onion, and sliced the chives with a kitchen knife.

Once all of the ingredients for the sauce were ready I dumped them all in a skillet with some olive oil on the stove. I also put the eggplant in the oven (350 degrees) for 20 minutes. BEFORE I put the eggplant in the oven I brushed on some olive oil and sprinkled some Italian seasoning.

The sauce thickened up as it simmered more on the stove.

After 20 minutes in the oven I took the eggplant out to add the sauce, basil, and cheese before sticking them back in the oven for 8 minutes.

Here is what the eggplant looked like once it baked for 20 minutes:

I then put on the sauce, basil leaves and Parmesan. I placed the eggplant back in the oven for about 8  minutes to left the cheese melt.

This smelled amazing and I could not wait to try it!

I was not disappointed with this meal.

One of the things I loved about this meal (besides the taste) was that it was extremely healthy!
