The other night Morgan was super husband and made me dinner! It is always a nice treat when someone makes you dinner 🙂
I was busy working on lessons and grading papers so he offered to make dinner. Score!
I did not pay close attention to how much he threw into the fajitas, but I can give you the recipe list if you’re interested.
- 2 red bell peppers
- 2 green bell peppers
- 2 yellow bell peppers
- 1 yellow onion
- 2 chicken breasts
- 5-6 baby bella mushrooms
- 1 packet McCormick fajita seasoning
- 1 pineapple (or canned pineapple)
- Tortillas (I use whole wheat)
The directions are pretty simple:
- Sautee cut up vegetables in pan with olive oil
- Grill chicken, adding pineapple once it is thoroughly grilled
- Mix fajita sauce according to package
- Mix all ingredients together in the large pan that the veggies are in
I love fajitas because you can make them super healthy, they are quick to make, and are fantastic for lunch the next day! I took them to school today and they were just as good (if not better) than last night.
After dinner we watched some Monday Night Football, where my Bears beat the Jets 🙂

Yesterday was the first official day of fall, which is by far my favorite time of the year!
Who doesn’t love football, candles, fall decor, Halloween, chili/soups, fall fashion and cozy blankets? The list could go on.
I have the day off from running, which I’m thankful for! My legs are still pretty tired from my 20 miler so I just plan on stretching tonight.
Tuesday is one of my favorite days of the week during the fall because Son’s of Anarchy is on! One of my best friends always comes over and we have popcorn and M&Ms. And drool over Jax.
Does anyone else like this show?!
